Cooler weather, cooler weather! Rah rah rah!
There have been lots of crazy things going on around these parts with the autumn blowing in. Love and life and football all that. There’s nothing more grounding than comfort food. Mexican comfort food.
This is super easy to make. Leave off the cheese and add veggies or salad as a side for a healthier option (I felt like splurging).
On a side note, I have generally stopped eating carbs after about 5 o’clock on weekdays. My scale hearts me. Except I made peanut butter cookies tonight and ate three of them.
