This blog probably makes you think I cook a lot more than I do. In reality, the hubbs does most of the cooking. When I do bust out my apron, I’m very picky about my recipes. I pick ones in my safe zone – usually marinated, always baked in liquid, rarely stray from chicken breast, and lots of cheese (cheese makes everything taste good).
One day last week I found this recipe for Garlic Chicken on Recipezaar.com. Baking chicken without having it swimming in a pool of sauce makes me nervous, but this recipe was just too easy. I followed it to a tee more or less — and it was quite possibly the most amazing dish I’ve ever made. A sentiment adamantly seconded by S. I served sauteed squash and grape tomatoes and salad on the side. The chicken was flavorful, not too garlic-y, amazingly juicy, and, most importantly, VERY easy! Leave work at 5:30pm, grocery store, cook, dinner at the table, TV on the couch by 7:30. Easy cheesy…well, easy garlic chicken. Give it a try!
Garlic Chicken
4 tsp. crushed garlic 1/4 cup olive oil 1/4 cup breadcrumbs (Italian if you’ve got ’em) 1/4 cup shredded Parmesan cheese 4 boneless, skinless chicken breasts salt pepper Italian seasoning- Preheat oven to 425 F
- Warm the garlic and olive oil to blend the flavors. In a separate dish, combine the bread crumbs and Parmesan cheese. Dip the chicken breasts in the olive oil and garlic mixture, then into the bread crumb mixture. Place in a shallow baking dish.
- Bake 30 to 35 minutes, or until juices run clear.
